I still call it Ayers rock and i live in Aust, but the polictically correct terminology is Uluru. Then again, i have never been there, so yeah, i guess if i did, i would be calling it uluru lol - as you said, best not to offend anyone

It can be called either Ayers Rock or Uluru, depending on who is speaking about it. I still use either name depending on what comes to mind faster and who I'm talking to.
If I'm talking to an international tourist, often they won't know its Aboriginal name, or don't know how to pronounce it properly, so I'll call it Ayers Rock just to make sure they know what I'm talking about, but there is no hard and fast rule as to which name you call it.
Calling it Uluru is considered to be more politically correct nowdays.
You won't offend anyone by calling it Ayers Rock, but if you happen to go there and start a conversation with an Aboriginal Elder, then use Uluru just out of respect.
If you happen to go there, you won't offend anyone just by being there, but Aboriginal leaders in Australia do request that you don't climb it anymore.
I myself have climbed it, but I was 7 years old at the time and it was many years ago, when Aboriginal requests for tourists not to climb it weren't as publicly known. It was a great experience but knowing what I know now, if I ever went there again I wouldn't climb it out of respect, as when I was young I didn't realise how spiritually important it was to the Aboriginal population.

If it is called Ayers Rock, Uluru is almost always there as an alternative name. Uluru is often written without the alternative. So the change is happening, but no one is getting excited about it.

i still call it Ayers rock but never been there either but if i did i would probably call it Uluru if everybody there did

Ayers Rock to me. Always was & always will be.
I have been there, several times via work, & call it Ayers Rock.
I'm fed up with all this political correctness, with everyone pu$$y-footing about on tenderhooks as to what is right to say & what is wrong.
