Turkey on tortillas with salsa.

Oh my gosh. Turkey leftovers are my favorite part of thanksgiving.

We made turkey sandwiches today (Soft white bread, a little mayo, warmed up stuffing and turkey.. bliss).

We also made turkey soup. We boiled the carcass (after removing all the meat we could) in water with carrots, celery, and onion, for about 4 hours. Then we strained the result (carcass falls apart at this point) through a mesh strainer into a bowl, and had a beautiful golden stock.

We let the stock sit for a bit, and a skin formed, which we skimmed off. Then, we put the stock back in the pot, added some more dark meat, and let it boil for 20 minutes along with some fresh carrots, celery, and onion (not the same used for boiling the carcass). We added lots of salt and pepper, and also some thyme and rosemary (had also been used to roast the turkey), and then added some egg noodles. We let the soup boil with the noodles in it for an additional 15-20 minutes, and then savored the deliciousness that is my turkey noodle soup!

We always have turkey enchiladas the day after. Super easy and a nice change from traditional tasting turkey dishes

Turkey sandwiches for lunch, and for dinner, I threw pieces of turkey in some of the gravy, heated it up along with mashed taters and buttered bread, and some green beans.
