Hi there again Jordan...as Old Cat Lady and Punk Raw Grrl stated Innova doesn't contain any of the fillers that is found in commercial cat foods (e.g. corn, corn meal, byproducts, etc) which helps provide a more optimal diet for felines and in turn their health is reflective of this...less shedding, glossy coat, etc.

The idea is that the higher end foods have more oils and moisture, which decreases dry skin,,,and helps with shedding. It's working for you cat, and that's good, but alot of people that are switching to this food are having the opposite problem. Cats/dogs are actually starting to lose hair and have skin problems after switching to the high end food.
If this starts to be a problem for you, and you must go back to another food, just add 2 or 3 drops of vegetable oil (no more) to the dry food daily, and it has the same effect of helping the skin, hair , and lessens shedding.

High Quality food is better for all animals. It is healthier for them, and it shows in their skin and coat. If her fur isn't softer already, it will be soon. It is the same with dogs. When I got my dog she was fed Pedigree at the pound. She is black, but while on Pedigree she looked gray, she had dandruff, and was itchy. We have switched her to a high quality natural food, and she is actually darker black, and shinier. And she sheds less, she needs less of the food (less fillers), she is softer, and she no longer has dandruff at all.
I think that their skin and coat are just evidence that you can see and touch to show how much healthier high quality pet food is than grocery store pet food.

For the same reason that people and children who eat fresh fruits and vegetables, drink milk, don't smoke or use alcohol or caffeine drinks have vibrant complexions, are not overweight and enjoy better overall health than people who exist on "junk" food and drinks.
I do a raw meat diet for my cats. They still shed and they don't vomit or have hairballs or get mats.
Healthy cats and people actually "shed" all the time - skin cells and hair because old cells are replaced with new ones. Cats do the same.

The nutrients in quality foods make cats healthier on the inside AND outside. If you ate poor quality food all the time like the grocery store garbage you mentioned your hair would probably fall out, too. I wish more people would make the switch. Evo's AWESOME stuff.

commercial brand cat food is full of fillers, corn, wheat, soy, if thats listed as the first ingredient then don't ude it, cats are carnivours, when you feed them low quality food, its deprived on vitamins and nutrients it needs, leading to a dry, sheddy coat.
when you switched to innova your cat got vitamins and nutrients meaning that your cats fur was properly nurshured and the hair strands live longer, meaning less shedding.
