Fish was caught off the shore of North Carolina's Outer Banks and was cleaned/fillet and flash frozen that day.

You did good by freezing ASAP, and the fish will keep longer the better it is sealed from air. All ideas already stated work, food saver, or freeze in water work well. My experience with Mahi Mahi is that it does not freeze well, in fact I try to use it fresh, so I would use it within a shorter time 4-6 months. The Wahoo keeps better and a year should no be a problem if sealed properly. I date my frozen fish and if I haven't used it in a year, out it goes. Doesn't happen too often

"Flash freezing", eliminates bacteria from settin' in (ya' did good ;) ), I'm guessta'matin' 3-4 months. Species of fish has a bearing on it ~ not familiar with Wahoo or Mahi Mahi aka Dorado, Dolphin, but am sure you'll get an accurate answer from a more authoritative Answers person on that. Rule of thumb, with fish, "Better safe than sorry" ;)...

I know that fish I fillet and freeze in water has still been good two years later. I can't keep fish from being eaten beyond that. 40yr exp Northwest Pacific Guide.

If you get all the air out of the packages (like with a food saver system) and the power doesn't go out on your freezer, it'll last over a year (that's the longest I've tried). If it's bagged loosely, it'll dry out near the surface and you'll get freezer burn.

you good use a dehydrator for it to last longer or to keep it from getting freezer burnt and going bad put water a the bag and then freeze it
