Some people believe that when you drink water (or any liquid) during a meal it dillutes the natural stomach acid that is used to begin digesting your food. If you wait until after, the food is in process, the acid is more concentrated and it will, thus, be less dilluted.
It's only a theory. I've never seen any clinical studies that say its true.

Maybe he thought drinking water would encourage you to eat more because it washes your food down? Personally I think drinking water while you eat makes you wind up eating less because you fill your stomach up with water. Water has no calories food does.
All in all, if you're exercising and dieting make sure to get lots of water, you need it.

Who knows...actually, if you drink a glass of water before a meal it helps surpress your appetite. Have you seen Travolta lately, he's blowing up like a fish!

Having a cup of water or two will not interfer with your digestion. In fact it helps digest your food. However, drinking large amount of water will affect your digestion.

My uncle once told me not to drink water with a meal because it can dilute your stomach acid, and you don't get all the nutrients out of you food because it won't digest properly.

Probably because it slows down metabolism, metabolism is mainly acid in your stomach, and water will like... weaken it, and slow down the food breaking down, but then I don't understand why you would be allowed to drink it right after, it would slow down right after :/
