During the years of The Plague in Europe, Doctors wore strange looking masks..long and 'beak' shaped...making them look like strange birds....hence quack quack!!

Because, during the black death/the great plague (whatever you want to call it!), doctors went around in beak shaped masks, which led to ducks, then to quacks.
