I own a JVC 1080P television a PS3 and I just bought a Sony STR-DG910 7.1-Channel Home Theater Receiver and HDMI cords 1.3. My question is the PS3 will not up convert copy protected standard DVDs but when using the receiver and the HDMI output, which It will up convert the quality of the Picture, will the DVD appear 1080pish or at least better despite PS3 not upconverting it or not? In additon would that picture quality be better or would another DVD player with component cables instead? and will the picture be 1080P, 1080i, 720P or just somewhere between 480p and 720P?

You are correct. Your PS3 or any DVD player can't upsacle SD DVDs unless it is transmitted over HDMI.
No problem.
Your TV is perfectly capable of taking the SD signal over component and scaling it to 1080p.
1080p means 1080 lines - nothing more nothing less. A 480 SD signal can be scaled to 1080 but all extra lines are interpolated. True HD means the source is HD.
