what kind of wine are they talking about?? For example, if a recipe calls for a cup of white wine do they mean pinot gregio, chardonay or any other kind of white wine? How do you know what's right? Are there certain red or white wines that are better for cooking with that will work with any recipe? thanks.

i would use for white wine chardonnay or sauvignon blanc. typically a bottle for around $10 like Fetzer, Vendange, etc. For red I would use cabernet sauvignon or merlot. again same brands.

cooking concentrates the flavor off wine when you cook it. so wines like pinot grigio are not as strong in flavor as say chardonnay. so you won't get as much flavor. but I use them anyways. it isnot that critical.

bottom line just don't use something sweet like riesling, gewurztraminer, that lambruscu stuff I see every one posting about for red. I usually grab something on sale.

if the recipe only calls for "white" or "red" without being specific then it is generally ok to use anything that falls into those categories. I usually keep a bottle of cheap chablis in my fridge or whatever is left over from the last party I had! there are better or worse choices I'm sure when it comes to what type of red or white to use but there is really no "wrong" choice.

You should use dry red or white wine in recipes. Any type is ok as long as you like the taste and would use it to drink . Don't use sweet.

Choose either your favorite wine or the wine you think will taste best with the meal, If you want to know about wine flavors check out the web there's plenty of info out there. I say just go with your favorite wine then you know it will taste good. Good luck.

the basic.. mostly cheap, and it doesn't have a name.(it is dry, sweet etc though)
