try using one of those knives that have little teeth and slice it very gently in an up and down motion. i'm serious. it works great on pies too.

Let it cool after baking and then try slicing it with a bread knife that is serrated. If that does not work then you are either baking it too long or it is too dry. Possibly try searching for a new recipe on Allrecipes.com. They have the ratings for each recipe as rated by users. You probably just need a different recipe with more oil or my favorite recipe has sour cream in it. I don't know if you are interested or not but I saw a recipe the other day for adding 1/2 cup of cocoa, 1 cup of white chocolate chips, and 1 cup of walnuts to banana bread. I thought it sounded like something different for the holdiays. Good luck!!

What I can think of to make with it is a trifle, french toast, a pudding pie, and a banana bread ball (like a cake ball). For the trifle, you could toast slices of banana bread (so they don't get too soggy) and chop it into cubes. Then, in a bowl, layer the bread cubes with pudding prepared with 3/4 of the milk that the recipe calls for (if you have vanilla pudding, you could flavor it with a few spoonfuls of nutella if you want to). Top the trifle with crushed pretzels, to add crunch and a little saltiness, and voila. For the french toast, just use the slices of banana bread as you would regularly (or make nutella and pb or pb&j french toast by making sandwiches with the banana bread and proceeding as usual) and you can top it with some nutella or usual toppings. For the pudding pie, you want to dry out the bread first by slicing it thinly, laying setting it on a wire rack in a 200 degree F oven until completely dried and hard. Once you've done that, grind the bread into crumbs, add about 1/4 of a cup of melted butter (this may vary depending on how much bread crumbs you got from the bread) and a couple tablespoons of sugar (may also vary). Then, press the crumb mixture into a pie plate and fill it with pudding prepared with 3/4 of the regular amount of milk (you could, again, flavor it with nutella or use any flavor of pudding you like/have). Again, you could top it with crushed pretzels or you could add crushed pretzels to the banana bread crumbs to make a sweet&salty crust. Lastly, for the banana bread balls, you could crumble the bread into a bowl and mix in either canned frosting or some cream cheese (pudding made with 1/2 the milk that the package says might work, too; you just want enough to form a dough that sticks together in balls and isn't super sticky). Then you can form the mixture into balls and roll them in crushed pretzels, then chill them until they're firm. This is all I could come up with, so I hope it helps!

I've been using this recipe for years with a lot of success and never had your problem, try it out :)

* 3 mashed, yellow bananas
* 1/3 cup melted butter
* 2/3 to 1 cup sugar
* 1 beaten egg
* 1 teaspoon vanilla
* 1 teaspoon baking soda
* A pinch of salt
* 1.5 cups of flour

Hi Margaret, Here's your answer: after cooking banana bread let it cool for at least 10 minutes on a wire rack or pan before slicing it (wire rack preferred). The key is it must cool sufficiently prior to slicing.

It's too dry OR you're using too much force with it *serated knife*. Try using an electic knife if you have one and that should do the trick but add extra butter or work it less next time so it's not as dry. You can wrap each piece in a wet paper towel and put it in the microwave for 10 seconds and it'll moisten it right up so it will be delish for this loaf.

It shouldn't. Remove from the oven and let the bread cool for 5 minutes before slicing with a cerrated knife.

Need to follow the instructions.
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
