But, in summary, polyhydroxy hydrocarbons are sufactants. Simplistically, they act sort of like soap. One part of the molecule is soluble in water, and one end is soluble in oils. In other words, you could use them in oil spill cleanup ... they would allow remaining oil (that you could not clean up) to dissolve in water.
