Sorry, I didn't see Rick Stein last night; you may already have tried this search on the BBC web site -

That seems to pull up all of Rick's recipes - so if you put in some of the ingredients, you might be lucky and get the one you're looking for.

There is a book based on that TV series containing many of the recipes shown called 'Rick Stein's Mediterranean Escapes.' It is published by BBC Books and can be bought via Amazon or most bookshops.
