this recipe came from my husband's grandmother....she was a diabetic and could not eat sweets so she had this recipe..it is called Sugar Free/Fat Free Peanut Butter Banana Pudding

1 pkg vanilla sugar free, fat free instant pudding mix
2 c. fat free milk
1/3 c. no sugar added creamy peanut butter
1 (8 oz) carton fat-free sour cream
42 vanilla wafers, divided
6 small bananas, divided
1 (8 0z) carton frozen fat free whipped topping, thawed
1 T. lemon juice
Prepare pudding mix according to package directions, using a whisk and 2 cups fat free milk. Do not use an electric mixer! Add peanut butter and sour cream, stirring well with wire whisk.
Line bottom of a 2 1/2 qt. casserole with 14 vanilla wafers. Peel and slice 4 bananas. Top wafers with 1/3 each of pudding mixture, banana slices, and whipped topping. Repeat layers twice using remaining wafters, pudding mixture, bananas, and topping. Cover and chill at least 2 hours. Pell and slice remaining 2 bananas, toss with lemon juice. Arrange slices around outer edges of dish

COCONUT CHOCOLATE CAKE

1/2 c butter
1/4 c cocoa powder
1/4 c milk
9 eggs
1 c Splenda
dash salt
1 tsp vanilla
1 tsp coconut extract
3/4 c sifted coconut flour
3/4 tsp baking powder
1/2- 3/4 c pecans - chopped

Melt the butter in a pan. Add the cocoa powder and milk and mix well. Remove from heat and set aside. In a bowl, mix together the eggs, Splenda, salt, vanilla and coconut extract. Stir in cocoa mixture. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Add nuts and stir well. Pour batter into sprayed 8x8x2" or 9x9x2" pan. Bake in preheated 350º oven for 35 minutes or until a knife inserted into the center comes out clean.

(You can get the coconut flour from your local grocery store if they carry Bob's Red Mill Flour products. If they don't have it on the shelf, they can order it for you. I've made this cake for my hubby who is diabetic a number of times. The coconut flour does not have gluten in it so it doesn't raise the blood sugar.)
