any ideas on a painting i could paint for her? or what i could include in a poem for her?

Here's a great idea of a collage for her. gather all the pictures you can find about her, pick the favorite ones, and ones that are taken at some milestone in her life, or there's a great story behind the picture, which in her case, I bet every picture has a great story... Then print them on a white page in black and white. Rip them to make them look aged, and rescued from fire... Paste them onto a canvas and glue them there. Write memorable stuff in black ink or indigo pencil (if you can find one, it's a very old thing ) - in which case, you'll have to pat the writing wet, to get the indigo to work... and such stuff. Even better, if you can find something in her handwriting, and present it to her with big bold letters, "THIS IS YOUR LIFE" like a memorabilia of what she is for you.
My husband's mom did that for each of her kids when they moved out of her house. It's a very nice thing to look at, very artistic. If you like a little color, pencil in some earth tones to make it look like sepia pictures. Get creative. Good luck! Use pictures of her old house, and pictures of landscape or traditions from Cuba! It should add a lovely tone to the whole ensemble. Also, you can draw in charcoal a sketched road, with many turns and use that as the background for your theme. Oh, I feel like doing one myself!

Something colourful, perhaps her native flowers, a couple dancing (abstract), a white dove in a beatiful sunset as background.

it all depends, what does she like? maybe paint her something cuban like a dress or a flower of something of that nature if she is still in touch with her roots,
