Chablis is a region in Burgundy. 99% of Chablis is made w/ the Chardonnay grape. A true Chablis will be chardonnay that has nice flinty, minerally characteristics. They are known to use less OAK barrels in their vinification process, so you are getting cleaner, crisper fruit as well. Some of the Premier and Grand Cru wines will be oak aged, but not for too long. These will still have the high fruit, acidity and minerality, but will be a bit richer from the Oak.
"Chardonnay" is hard to describe since we don't know exactly what you are referring to. White Burgundy is Chardonnay, but is worlds different from California chardonnay. A nice general statement would be, Old World- you taste the region or earth, New World- you taste the sunshine (thus big fruit forward wines, but might be a bit less complex).

Chablis' have more acidity and less fruit flavours than other Chardonnays. This is due to the chardonnay grape being grown in the northern-most region of burgundy and the cold weather there.
They tend to have more of a "minerally" or "flinty" taste.
Overall - you're looking at a much drier wine than most "new-world" chardonnays
