Be honest. My daughter invited me over yesterday & made a green bean dish. I can't stand them, so I told her I'd pass on that one because I don't like green beans. (string beans) She understood.

Gracious hosts can often be pushy with food. There are many types of food that some people can't eat without feeling sick, no matter how tasty or appealing it seems. Say that you really appreciate their offer, but that particular type of food plays havoc with your digestive system; adding that you wish it didn't because it tastes delicious. Follow on with something like, "now if you offered me a coffee and biscuit (or whatever) that would really be nice!"
Give them an alternative to indicate that you appreciate their hospitality and kindness, while at the same time appeasing their need to offer you something. You get something you want; they feel like gracious hosts.

Straight up tell them the truth. You have to be honest about it, because lying could put you in a position where you have to eat the food more. You may be trying to spare their feelings but lying to them and them finding out may hurt them all the worse.

You politely decline his offer and tell him that you are still stuffed from breakfast or lunch you just had.
I know you can't keep using this every time you see him, so I think that in the future just keep declining his offerings and he will get the message sooner than later.

Could you always make sure to eat first, then stop at McDonalds (or somewhere) and just get a cup of water. Then they will think that you just ate. You could tell them, "No, thanks, I ate already, and I have this water. I am really full."

tell them the truth, that you don't eat that kind of food,
if you don't do it like that, they are going
to keep giving you the same kind of food,
and I don't think you want that,

Well, instead of eating the food you could have hot rampant sex with them.
That would certainly make them ignore the food.
