they use japanese for everything else but they say sifu what up with that

I trained in Kenpo and we said "Sensei"
(my old school teacher,Sensei Bill Ryusaki)

Kempo/Kenpo do have some original roots in Chinese boxing, thus, some instructors prefer "Sifu". But, depending on what variation of Kempo/Kenpo they instruct, they may prefer "Sensei" since various versions of Kempo/Kenpo do incorporate Japanese styles such as judo and jujitsu.

Dougzinboston has pretty much hit the nail on the head,
In my school we where taught Okinawan Kempo for the first part of your training and as you advanced you sway more to the Chinese teachings, yes it is a bit of a mixed bag Kempo,it started of semi circular(Okinawan) and was taught with the Nippon language, but once we started learning the advanced Kempo/Chuan Fa(Circular) we change to the Mandarin language, etc

There is more to it than what I have writen, im just trying to keep it Basic.

chinese do that too. i have 2-3 years in kung fu/ lion dancing and i call my master sifu. i think it is just respectful
