Definitely fresh! When you use canned veggies in a baking recipe, they tend to fall apart. Fresh string beans will keep their form and not have that can flavor either, yuck!

Although I have sworn off green bean casserole for the rest of my life, I believe that fresh green beans are the way to go, as long as you cook them first. You can also try defrosted frozen green beans too. Here's a look at my green bean recipe for the holidays:

10 slices peppered platter bacon
1 yellow onion, diced
2 lbs fresh green beans, picked over, trimmed and cut at the diagonal
1 Tsp kosher salt
1/2 tsp fresh ground pepper
1 cup organic chicken broth (or vege broth)

Saute bacon with onion until translucent. Add chicken broth and green beans. Cover and simmer until beans are crisp tender. Add salt and pepper and serve.

fresh! don't use the canned beans unless you want the casserole to end up in the garbage!
