Some potential solutions to your problem:
Look carefully at the mechanism that is messing up. See if you can compare how it works to the way another similar door works...maybe a neighbor's or the closet down the hall, or whatever. It may be something stuck in there, or missing a ball bearing, or something loose, or any number of problems. By finding out the cause of the malfunction, maybe you can solve it better.
Another thing is to remove the door and replace as you said with a rollup blind or a Roman shade (these are other window treatments) or, as you said, a curtain. There are springloaded curtain rods out there, with rubber stoppers on the end, similar to a shower curtain rod but smaller, you work it in while it's small, then tighten it into place. For the curtain, it may be as simple as a twin bedsheet where you prick open the side seam on the top hem (that goes under your chin! hahah) and put the tension rod inside there...
Another option is to remove the doors and don't replace them with anything. If your pantry is tidy and organized, it shouldn't be a problem and you have even easier access to your supplies.
Last thing you could do, is relocate the objects in the pantry that you use all the time, to a place where they are less of a headache to get. Then replace those items with things that you don't use all the time, making it a place you only deal with every once in a while.
Usually pantry spaces are pretty valuable for food storage, and in homes that have pantries, there might not be enough space for storage if you took that space away. I guess you would have to decide that for yourself. You might be able to use it for something else, more appropriate if you are short on storage elsewhere in the house...some typical ideas would be office supplies, pet supplies, re-outfit it as a coat closet if it's deep enough, dishes (would be great for nicest dishes if you installed some hockey puck lighting and removed the doors, making it a display space) or small appliances, or cookbooks, or any combination of these, depending on what you have that needs a home, and how much space you are working with.

you could always just replace the track or get a new door set altogether. i dont reallly have any other ideas but your idea of a curtain rod and panel would probably be the easiest. then again you could just keep the pantry kinda clean and leave no door at all.
