I used to work in a resturant and the way we carmilized onions was the best id ever had
Id use red onions.....
Slice the onions into thin strips and put into a pan with butter and sweat them a little......by sweat I mean on a med low temp and until they start giving up juices.....add about 1/4 cup of balsamic vinigar per 3 onions and a pinch of salt and pepper......and saute till the onions become softer but not to soft.....it is great on steaks and sandwiches......or as a topping for a spinach salad....

slice your onions, put a little olive oil and butter in a saute pan. Cook them slowly, stirring occasionally over medium heat until they begin to change color. When the color begins to change watch them closely and stir more frequently until they reach the desired, deep caramel color. Some recipes advise sprinkling with a tiny bit of sugar. I have never found that to be necessary. Patience and a watchful eye are the keys.

well u don't have to cut them thin , you could cut them really as thick as you want
keeping them thin would increase your chances of burning them
you cook your sliced onions in a frying pan over medium-low heat with oil or butter and some salt and let them cook low and slow
in about 5-10 minutes they will be ready but the longer the better they will get and taste

I agree with Susan D. slice onions thin and cook with a bit of olive oil and butter stirring occasionally until they become really dark. Have you had a really good dark French onion soup? you want your onions that dark. The darker the color, the deeper the flavor. Don't burn your onions have patience.

Carmelizing onions is just sauteeing them until they begin to pale in color. Keep the heat down because they burn easy.

i think all it is is just slicing up the onions really thin and putting it on a frying pan and just letting it turn a little brown
