Yes, that is fine. Just make sure that it is not left out at room temp. Think of it like left over fried chicken. It will keep for 3 or 4 days as long as its in the fridge. You could store it longer if your were to freeze it, but for this I would de-bone it first. This way it would keep for about 2-3 months safely. Of course, I'm sure your as full as I am this Thanksgiving evening so it would be fine to put it in the fridge and de-bone it for freezing tomarrow. The only down side is the longer it is stored in the fridge the dryer it will get, unless someone knows a good way to keep it moist.... but that's another question entirely.

Yes. i usually remove all the meat the same day unless I have other things to do. Just make sure to refrigerate as soon as possible. Bacteria grows quick on poultry. My reason for doing it the same day is to save room in the frig. I often freeze the carcass and use it for making stock later.
