1. Using yukon gold potatos, slice into quarters and boil until fork tender. Drain and let cool completely.
2. In skillet, melt 1 cube butter and stir in 1 cup diced yellow onion (more or less). Add 1 T minced garlic (opt.) and 1/2 cup diced red bell pepper (opt.). Saute until onion is tender and translucent.
3. Add sliced cooked potatos. Saute with onion and garlic mixture until browned. Cover briefly to cook thru. Remove cover and season with kosher salt and fresh ground pepper. If desired, add shredded parmesan or asiago cheese.

I know this sounds silly, but at my house, we use tator tots! Just put a little oil in the bottom of your frying pan. Let it heat up and add your tator tots. Then cover with a lid. You need to stir them periodically to make sure they don't stick and burn. And don't use too high heat. Medium or lower. Depending on how much you need, this really eliminates cutting potatoes and using too much seasoning. You don't even need salt! Most tator tots are already seasoned. When they are heated through, they fall apart. You can uncover to crisp them up a little and just keep stirring! My kids love them!!!

We like hash browns made from last night's left-over baked potatoes. Peel, slice or dice and saute in butter. Add salt and pepper and, if you like, onion, green pepper or sprinkle with cheese when done.

1.grate potatos 2. squeeze the water out,(as much as possible). 3.get a pan hot, melt butter, or add a little olive oil, let it get hot. 4. add potatoes, and pan fry. Salt &pepper done.
