How can I be sure? I strongly suspect that, if God existed, his (or rather, its) abilities and thoughts would be so far beyond what we humans can even imagine that it would be impossible to say. So you asking me what I would do if I were God is sort of like one amoeba asking another what it would do if it were a human- only, your question has a much bigger gap between the things involved.
That said, if I were to retain my current mindset, and be granted absolute power only over one universe (or set of universes) and not over myself...it's hard to say. I would probably try to create intelligent life as quickly as possible, then talk to it and learn from it, and ultimately make plans with it to see if other universes existed and whether they could be accessed.

Hide dinosaur fossils everywhere, make the universe appear to be much older than it is, and then torment people for all eternity if they didn't believe that I created the universe 8,000 years ago. What else could you do?

What I would do is something, ANYTHING, to show that I existed.
I find it hard so believe that someone SOOO powerful and who supposedly loves us and wants us to serve him, goes SOOO far out of his way to keep his existence hidden.
