Yes, you could spit roast a cow but i'd imagine it'd take a very long time.
Remember that many years ago people used to spit roast whole boars.
I've also witnessed goats being bbq'd whole (dead of course).

I am really tempted to try this sometime when drunk, lol!

The best thing I can think of to use as a spit is a round hay bale carrier, the type that hook to the back of your tractor or pick-up, and after that it would just operate like any old fashioned pig roast.

Oh my god, this is about the funniest idea I've heard of in a long time. And you couldn't just baste it, either, 'cause it would be too big! You would need to fill a super soaker with marinade or something.

Yes. Provided you take the giblets out first. You can roast a whole ox over a charcoal fire in about 6 hours.
