My brother said his wife didnt want him to put the wine in the fridge because she thinks it should not be drank cold.
She is Bulgarian. She drinks pop room temperature. I am sure its a cultural thing with her.
How do we convince her we like our wine chilled, or should I just bring my own bottle? Do you chill your wine?

Wine is meant to be drank at CELLAR temperature.

This somehow got misconstrued to mean you can just uncork it and drink. This is true if you store your wine in a wine cellar.

I don't have one, though, and neither does your brother's wife.

Room temperature is about 68F, and cellar temperature is 55F. Clearly these 13 degrees matter, so put it in the fridge to get it down to 55F. Don't get it all the way down to fridge temperature (36-38F) -- you will hide all the flavor.

As said above, put your reds in the fridge for 20 minutes before serving, take your whites out 20 minutes before serving. I do 30 minutes, but still.

It depends on if the wine is a white or a red wine. Most whites do get chilled while most reds are served at room temperature. Although if you allow the wine to breathe for a few extra minutes then sometimes it is not necessary to chill a white. There are some very good white wines that need not be chilled. Robert Mondavi Sauvignon Blanc, Ravenshook Shiraz, and Francis Ford Coppola Merlot 5 star just to name a few. Also none of these will break the bank.

Many years ago we took a class conducted by a winemaker at a local winery. A question, “How to unload bad wine?” Answer: “Chill it”

Refrigerating wines it tightens every this up. The smells do not come out, and the true picture of the wine is lost. The rule of chilling whiles and not reds is not true. If you have a top quality expensive white wine, then you will be throwing away your money by chilling it. A good white wine does not need to be chilled. If you have a favorite white, then you may want to experiment by cooling it less. Get a ice bucket and monitor it. See what you taste and smell as the wine gets colder.

If you have the opportunity of going to places where they allow to taste wines before purchasing them (wineries), then I suggest you taste everything at room temperature. Don’t be fooled. If it is cold, then put you hands around the glass and let it warm up

It's just a personal preference thing. I feel that wines taste better when chilled. Others like them warm.

The only wine I liked warm, was a spiced wine I found at the Wine and Jazz fest in Morgantown, WV. That was an AWESOME wine. But it wasn't room temperature. It was heated, so I guess that's a llittle different.

If you prefer yours chilled, then chill it and bring it along. I'm sure she won't mind.

If, and how much, you chill your wine is all about personal preference. "Room temparture" usually means around 68 degrees farenheit. The goal is to get the wine to a temparture that releases the most aroma, and therefore, flavor.

A good rule of thumb is to put reds in the refrigerator about 20 minutes BEFORE serving them, and to refrigerate your whites and remove them about 20 minutes before serving them.
