It depends on the knife. I have a good Benchmade locking folder I carry and if it ever gets dirty I'll use a little dish soap and hot water, then follow up by wiping it all down with some Break Free CLP to keep it functioning well and rust free.

I find that soap and water are the bvest cleaners for my knives. Afterh a thorough rinse with hot water, I wipe them, dry and spray a little bit of WD-40 on them. I then wipe off almost all of the WD-40 leaving only a trace on the metal to protect it. Before using the knives to cut anything that I am going to eat, I completely wash off any traces of the WD-40.

I used to use wd-40 until I got into guns and now I use the same solutions I clean those with. Hoppe's 9 and Hoppe's oil...
