Because they're not allowed to anymore. Separation of church and state put the kibosh on that kind of stuff.

You might have noticed that in some countries that don't have separation of religion and government, humans are still living in the Dark Ages: women are stoned to death for having the audacity to have been raped, people are killed for leaving the state-supported religion, homosexuals are killed because of their sexuality, etc.

It is true that some Crusaders did some despicable things in a spiteful, vengeful way. But the Church herself never condoned, let alone ordered, these excesses. And as for the Inquisition, if it was as bad as some anti-Catholics claim, it is odd that there are records of people requesting transfers of their cases to the Inquisition from the secular Spanish courts. No doubt, some horrid things occurred, but it is more accurately understood as the unfortunate result of the weaknesses and sin of individuals, not the official teaching of the Church.

There is a Monarch to come who will defend the pope and conquer all the infidel and apostate nations for the Church. Then there will be peace on earth for a while Anti-Christ will come with great deceiving and the great Monarch will lay down his crown on the mount of olives and then he will be slayed by the Anti-Christ.

After that Christ will come in glory and defeat the enemy.

God is love and he who abides in Love abides in God and God in Him
Catholics need to learn their Faith, live it and defend it by word and charitable and reasonable action.

The Crusades were to be defensive wars against aggressive Muslim invasions, raids and seizure of Christian Holy Places and populations

Aggressive war, murder of civilians and persecution are contrary to Catholic ethics.
