14 eggs for deviled eggs should make 28 deviled eggs, right? 6 eggs for egg salad will be enough for 5 people as long as you add either/or onions or celery and mayo. I'm not familiar with eggs in gravy...

I'd not make the egg salad. You must be putting the eggs in giblet gravy and for only 5 people, a couple eggs would be enough, I think. Everyone loves deviled eggs. Happy Thanksgiving!!

It won't be enough for egg salad. One egg just makes a tiny little scoop of salad. It takes 2-3 eggs for a modest sandwich. Just make devilled eggs. If you are short on food, you could make a macaroni salad and add some chopped eggs, celery and onion to that.

I've never heard of eggs in gravy. Interesting!

If you don't think that is enought, try making a potato/egg salad...it's delicious, I promise. My mom makes it every Thanksgiving.

Ingredients:
* 3-4 peeled & diced medium potatoes
* 3-4 boiled eggs
* Mix of 1/2 mayo and 1/2 mustard, to taste (the salad should be covered in, but not so much that it's soupy)
* Salt and pepper to taste

Cook the potatoes in water until they are soft, but not TOO soft. Just enough to bite them comfortably. Take them out of the water and drain them.

Cut your boiled eggs in small-medium pieces.

Mix them with the potatoes.

Add diced celery, as much or as little as you like.

Now, mix the eggs, potatoes, and celery with a mix of 1/2 mayo and 1/2 mustard. Add salt and pepper to taste.

HAPPY THANKSGIVING!
