We're trying to eat dinner earlier so that our toddler can stay up and eat with us, but as I don't get home from work until 6.30/7 three nights a week we've got to have a few more quick dinners to cook. We do stir fries, pasta dishes, or ready meals (!) at the moment - any more suggestions?

One of my faves is a quick taco salad... fry some hamburger meat (season with salt/pepper/garlic salt), let it cook while you chop up some lettuce and tomato and toss it all together in a big bowl (drain meat first). Grab some cheese, salsa and sour cream for topping. Scoop up with tortilla chips. Usually takes about 15 minutes and has easy clean up.

A quick bake penne - boil penne, heat up sauce; add it all together and put in a baking pan, top with mozzerella - bake for 15 minutes @ 350 (also tastes good wtih grilled chicken or sausage).

Invest in a slow cooker. Prepare the stew/casserole the night before, peel potatoes for mash, leave them in water. Turn on the cooker on low before you go to work and it will be cooked by the time you get home!
When you come to cook the potatoes, cut them into small chunks so they cook quicker!
An easy dinner to do and the small person will love it!!

Fry and onion with some mixed herbs and add sliced smoked-sausage, pasta and a tim of chopped tomatoes. Ready in 15 minutes.

Green Rice

(It looks very nice and tastes great...and EASY)

In a blender, put a bunch of cilantro (with stems and everything), enough water to cook your rice, and a little piece of an onion.

Blend until you have a liquid, green mix. Save for later.

On an extended frying pan, fry rice with a bit of oil for a minute or two. Once you've done that, pour your green mix over it, add salt to your taste, cover it, and let it cook on low fire.

Now you just wait until it's soft and fluffy. Great for accompanying turkey, chicken or fish dishes!!!

slow cookers are great, you can turn on low in morning and come home to hot cooked meal, you can cook anything in them....meatloaf, meatballs, chile, spaghetti sauce, soups, stew, roasts, even foil wrapped baked potatoes!
also there are many meals and casseroles you can prepare and cover in fridge, then cook when you get home. Or cook it in the morning or night before to re-heat the next night.
you can also spend time on a weekend to make large batches of something or several dishes to freeze then they are ready for cooking or reheating.
i mean like a lasagna, or a few small ones.( if you make one its just as easy to make 2) or cabbage rolls etc, and freeze one. chiles or soups or baked beans can be divided into meal size portions for freezing.
how bout burgers, potato salad, omlettes, bacon and eggs, pancakes and mini sausages, chicken burgers/fingers/nuggets, fish sticks,salads, devilled eggs, cold meat sandwiches with your fave toppings such as lettuce or tomatoes, pickles, cheese, and veggies with dip on the side, frozen big or mini pizzas, tuna burgers, tuna helper, pogos on the stick, soup and salad, grilled cheeses. a pre cooked mini ham, sliced and fried a few min, and instant potatoes (lots of flavours there) or pasta.
Another good one i do is add a slice of ham and slice of cheddar in a pillsbury cresent roll, before rolling and baking. yummy and they only cook like 12 - 15 min. the possibilities are endless, you just have to be creative. good luck, i hope i have given you a few ideas

i call these manwich cups
hamburger meat or ground turkey
use 1 can of manwich mix
jumbo biscuits
shredded cheese
muffin pan

brown meat
spray pan
stretch biscuits
push the middle it into pan add cheese
then meat then cheese for top bake 400
for 10 min you can also just make cheese cups..... this is really easy i promise....
