They believe in it. They're just incorrect in their definition of "evidence" in the context of creation and/or the existence of a deity. They believe with all their hearts that personal experience and a desire to believe = "evidence." Unfortunately this is not truly evidence.
Also to Somebody - you're waiting for someone to show you evidence, then you define creation as evidence of a creator. So I'm confused. Do you or don't you believe that life and the universe were created? It would seem to me that you do believe this, since you fallaciously claim that art is evidence of an artist, yet you flippantly state that you're still waiting for evidence. Hmmm.
For those who are wondering, the "art is evidence of an artist" line of thinking is wrong because a person can define anything they want to as "art." It doesn't make it literally art, and therefore it is not evidence of an artist. Similarly, you can call the universe "creation," but your limited understanding of the universe will not make it literally become "creation."
To those who claim that the Bible hasn't changed, and science has - lol. Just tell me how many of the laws in Deuteronomy you still follow, and tell me whether the Bible has changed. Its printed word may not have changed, but what we as a community will and will not accept from the Bible has changed dramatically. Science's ability to change is its strength. Anybody who sees unchanging and inflexibility as a strength and not a dire weakness is sadly ill-informed.
"Like someone said earlier today, the absence of evidence is not evidence of absence"
A pretty catchphrase, but sadly it catches you in itself pretty deftly. So you believe in fairies and leprechauns, right? Because there's no evidence for them - therefore you must believe, since the absence of evidence is not evidence for absence, right?

I believe whole-heartedly in evidence. That if there is a creation it is evidence of a creator. If I told you the universe farted and suddenly a beautiful metal cylinder came into being of its own accord, and that this cylinder had a beautiful picture that also spell out a word in English, and that with in this cylinder was a liquid that was vacuum-sealed so that it would remain fresh, and that this liquid was sweet and pleasant to drink. You would laugh me to scorn stating that it was clearly made by Pepsi.
But you want me to believe that a food that grows and even reproduces itself, a food that is sealed in a thick skin so that it will remain fresh, a skin that changes colors so as to inform when the food is fresh, whose skin is also biodegradable and even fertilizes the ground to help more food reproduce, a food that inside is filled with a sweet substance that not only tastes good but also provides my body with several beneficial nutrients is the result of a giant universal fart. And yet I laugh you to scorn because you have just seen one of the most minor creations that God ever made for us, a banana.
The sad fact is you know the truth and yet you choose to believe a lie and so shall you be damned. For you have broken the law of God, you are a criminal in the eyes of God and still you refuse to repent and receive life. You have chosen death.

Sure. Just waiting for someone to show me some.
edit:
To Slaveof12 and others who would call me ignorant -
ev·i·dence
noun
1. A thing or things helpful in forming a conclusion or judgment: The broken window was evidence that a burglary had taken place. Scientists weigh the evidence for and against a hypothesis.
2. Something indicative; an outward sign: evidence of grief on a mourner's face.
3. Law The documentary or oral statements and the material objects admissible as testimony in a court of law.
tr.v. ev·i·denced, ev·i·denc·ing, ev·i·denc·es
1. To indicate clearly; exemplify or prove.
2. To support by testimony; attest.
I shall use it in several sentences to demonstrate meaning:
Art is evidence of an artist.
Poetry is evidence of a poet.
Architecture is evidence of an architect.
Composition is evidence of a composer.
Design is evidence of a designer.
Life is evidence of ______. (hint: three letter word beginning with God.) oops, I gave it away.
edit:
gary 7 - Please don't be confused. I am still waiting for evidence for what you say. Here is some hard evidence for what I believe.
http://video.google.com/videoplay?docid=5725394906886443944
Do you have any evidence.

that is why i am a christian I once did not care about anything but myself or pleasure and fun,, . i knew of GOD i cant say iwas an athiest but i lived my life as if their was not a God, u see when i was a teen the evedience penticostals gave me just didnt work... I seen no love but fear tactics used to persuade folks to come to christ,.. ,it was not untill i went to a prophecy crusade and i seen the bible that was soo hard to read and figure out come alive..
the past and the future seemed to blend together like a crossward puzzle ,, i never seen the bible presented in this light before key phrases and words that you never saw before when u read the bible now make it easy or easier to follow what happened in the past and what it shows will soon come about . if it were not for the evidence i found clearly that unlocks prophetic symbols i could never be a christian ,, murray

That question is kinda paradoxical, actually. 'Evidence' would not necessitate the need for 'belief,' per se. The two are philosophically exclusive of each other.
Christians do believe that evidence as a concept exists, yes.

Everyone believes in Evidence,
Where we differ is in the interpretation of that evidence
Leading up to the rise of the third Reich, there was mountains and mountains of evidence to suggest that Jews and blacks were inferior products of evolution, it was this ingrained attitude that led to the holocaust
like i said, there was mountains and mountains of what you call evidence to support the theory that Jews were predominantly apes.
Of course people who rejected this and claimed they were made in the image of God like everybody else were branded idiots, fools, uneducated and unable to reason.
While those that were able to reason went on to massacre millions in concentration camps,
they were able to do this because they went to school and therefore were able to appreciate all of the EVIDENCE presented which suggested that Jews were apes.
I guess blacks and Asians are inferior products of evolution
I guess all the evidence of climate change explians why uneducated people can't work out why man made CO2 is responsible for melting ice sheets on mars and Saturn
I guess it's uneducated people that are able to work out that IBM provided the computers to tabulate and mark all of the jewish prisoners during the war
I guess uneducated people are able to work out that IBM's daughter company verichip is making RFID tags to tabulate the whole world
Again what are we going to do with all this evidence
Fossil evidence which does not show a single intermediate animal despite the millions of species which must have done so
Fossil records which show animals all lying dead in the same direction as if to say they were killed in a catastrophe like an oncoming wave,
Fossil records which show fishes 400 million years old, and the same fish are alive today that look EXXACTLY the same.
What are us uneducated people to do with all this Evidence
you can either believe it when a person with a white coat says yes its true
or when your governments ask you to beleive it
(Iraq has WMD)
or when your pope says yes i believe in evolution then goes off to kiss a quran, A man who calls himself the vicar of Christ but yet whole heartedly endorses 2 theories which deny God as Creator, and Jesus as his Saviour
and these are the people you put your faith in
Put it in God,
The Devils best trick is to convince you he does not exist
Again i ask you, what is evidence, if it's not manipulated, mis interpreted and ignored and strained till it produces the result that satisfies you most
holocaust denies look at all the dead bodies and say hmmmm you know what, the blue dye proves their was no holocaust.
Evolution believes are not bothered that the chances of evolution occurring lie outside the mathematical possibility of occurrences = 1 x 10 the power of 80
If you are aware thats the chance of evo happening, when combined with the chances of the unexplainable event that is abiogenesis, and a big bang that dumps everything in clusters
your odds are now 1 x 10 to the power of 127
which lies outside the mathematical possibility of ever occurring
With odds like this you are no longer relying on evidence, you can't even call it a science
you are relying on blind faith
and that's why it's a religion
Thumbs down because you hate what i say, or because you are looking for more evidence
Science has always had its holy grail to prove man is his own god
In the middle ages it was the search for the Quintessential "fifth element"
then it was the elixirs of youth
Then it was the formula to turn lead into Gold
Then it was the philosophers stone
and now its the "Missing Links"
What will you think of next?, the bible hasn't changed one bit since then,.
Peace
