Metal Gear Solid 2 and Metal Gear Solid 3 are some of the best stealth games ever made for the PS2. Also there is the Hitman Series as well. My favorite games from the Hitman series was Hitman: Silent Assassin and Hitman: Contracts.

Metal Gera Solid games. I would go for the 3rd one, Snake Eater. Awesome game. Manhunt 1 and 2 are good also. Liked Manhunt 1 better. There's also Shinobido Imashime, Hitman, Tenchu, Spy Fiction, and Stolen.
