I want to be sure it will be cooked enough so that it is safe to eat.
How can I do that without a thermometer?

I cook mine till its cooked the whole way through, when baking: 350 degrees for about 40 minutes.
If the juices run clear in the middle you're good.
Thats how I was raised to cook, and I've never gotten sick from under cooked meat.

Read the instructions and cook based on weight and time. For example, if it is 20 minutes per pound (just an example) than figure it out and it should be fine.
