A friend of mine is making devils food cake and ran out of eggs, what can she substitute for eggs in the recipie? I already suggested Mayo, but she don't want to go that far. Thanks in advance.

at this late hour of the evening in our area, as it's heading for midnight, no neighbors are up, and I'm too far away to help. also I think her stores are closed for the evening/holiday. Thanks.

I don't know if you have any, but I just read that 1 Tbsp ground flaxseed mixed with 3 Tbsp water will thicken and can be used for an egg substitute.

I also found this:
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes

Mayo is not a sub for eggs. Mayo is an emulsion of egg yolks and oil w/lemon juice. The protein that is needed for the cake recipe comes from the eggs, but mainly from the whites. Unfortunately, they are essential. Using mayo would add extra oil, and the emulsion in the mayo would break, giving you undesired results. I would suggest going to the local gas station convenient store and pick up some. They usually carry them. Im going to assume that the grocery stores are closed for the holiday. You will have to get the eggs, or the cake wont come out right.

Mayo is made from mostly eggs so it really works well I use it when I am out of eggs and you can't tell any differemce in the taste or texture.

devlis=devils......Egg Beaters can be used instead of eggs, if someone has them in their refrigerator. Can't your friend borrow a couple of eggs from a neighbor?

Try mayonaise about two table spoon. It has eggs and oil in it and it will stay moist and bring the flavor of the choclate out.

mayo just add a little extra sugar a tablespoon to offset the acidity from the lemon juice.. you are right!!!!
