does anybody know something i can do with canned corn. something easy, but i just don't want plain corn. thanks :)

"This concoction of canned corn and corn muffin mix is reminiscent of spoonbread."

INGREDIENTS:
1 (15.25 ounce) can whole kernel corn, drained
1 (14.75 ounce) can cream-style corn
1 (8 ounce) container sour cream
1 cup melted butter
2 eggs, beaten
1 (8.5 ounce) package dry corn muffin mix

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Combine the whole-kernel corn, cream-style corn, sour cream, melted butter or margarine, eggs and corn muffin mix. Mix well and pour into one 9x13 inch baking pan.
3. Bake for 35 to 45 minutes.

"Colorful and spicy, this creamy tortilla chip dip is a blend of corn, tomatoes and spices."

INGREDIENTS:
1/4 (15 ounce) can white corn, drained
1/4 (15 ounce) can yellow corn, drained
1/4 (10 ounce) can diced tomatoes with green chile peppers, drained
1/4 (8 ounce) package cream cheese, diced and softened
1/8 teaspoon chili powder
1/8 teaspoon garlic powder
chopped fresh cilantro to taste

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium baking dish, mix white corn, yellow corn, diced tomatoes with green chile peppers, cream cheese, chili powder, garlic powder and cilantro.
3. Bake in the preheated oven 30 minutes, or until hot bubbly

When you say something easy, Does it mean to be ready in just a few minutes.

Here it is what you can do, very simple recipe
Corn Quesadillas
1 can of canned corn
2 Roma tomatoes
1 jalapeno pepper
1 small onion
pinch of salt
pepper
1 tea spoon of olive oil
4 floor tortillas
mozzarella cheese.

Brush floor tortillas with olive oil, add pepper to the same side of the quesadillas


drain the corn, chop tomatoes, onions, peppers, add the rest of ingredients, mix it all together, don't forget to add salt and pepper as well, prepare quesadillas the same way they are prepare. It will bring a great southern flavor to your mouth specially if you add a pinch of cumin to the mix.

Try, you'll be surprised.

southwestern corn

ingredients
1 tablespoon vegetable oil
2 medium red bell peppers, cored, seeded, deribbed and chopped
3 cups canned corn kernels, drained
2 jarred jalapeño peppers, seeded and minced
1/2 cup chopped cilantro or fresh parsley
2 teaspoons kosher salt
Freshly ground black pepper to taste

Preparation

Heat the oil in a medium saucepan over medium heat. Add the red peppers and cook for 2 minutes, stirring occasionally. Stir in the corn and the remaining ingredients. Cook until heated through, about 5 1/2 minutes.

mmmm.... my favorite recipe is what we call Corn PowPow! It's really easy:

1 can creamed corn
1 can corn (drained)
8 oz container sour cream
1 stick of margarine or butter
2 eggs
1 box Jiffy corn muffin mix
Mix first 6 ingredients. Then stir in muffin mix. Pour into 8X8 greased pan. Bake at 350 for 30 minutes.

i make corn casserol
1 can creamed corn
1 can whole kernal corn not drained
1 box jiffy corn bread mix
1 egg
2-3 cups shredded cheese
1-2 cups sour cream

in 1/2 sheet cake pan mix both corn cans with corn bread mix and egg
dolop sour cream over entire pan
top with cheese

bake in 375 oven for 45 minutes or until firm and golden brown on top
MMMMMMM GOOD!

Cut up some bacon, chop up a red bell pepper, saute in olive oil add canned corn and season salt and you got some tasty fried corn.

Use a half stick of real butter. Melt in pot. Open can, drain thouroughly. Add corn to pot add salt and pepper. Cook over a med to low fire stiring occasionally until the butter begins to carmelize. Chopped onion can be added or onion and green pepper will make it mexicorn.

It is really good with a block of cream cheese stirred in. I use about a half a block (4 oz) per can of corn. Drain it but reserve just a little of the water to as it mixes with the cream cheese. This is really really really good.

well why dont you try a cornbread with corn in it with green beans and a nice noodle and sauce and u have yourself a nice meal

You can add a little bit of chopped bell peppers. Adds a nice flavor.
