Well, if its your first time to HK or China, I think you should probably check out a few temples. I think the temple in Sheung Wan (near Central) is a good stop. Its called Man Mo Temple. Its great because the area it is in is so cool, with all kinds of hidden markets and neat little side streets. Its all that remains of historic HK. Just exploring that area could take a day. If you want to go to an impressive looking, though not historic, temple, check out Wong Tai Sin temple off the Wong Tai Sin MTR (train) station. Be sure to grab some "shaking sticks" and have your fortune told!
I also recommend hopping on the trolley in Sheung Wan and heading towards Happy Valley. Its the cheapest and best way to get a real feel for HK city life. ($2HK or 25 cents US)
You have to visit Victoria Peak to get a good view of the city. Tip here is to go at night, that way if the air is not clear like most days, you still get a great view of the city lights. Also, if the line to take the Peak Tram is too long... forget about it and hop in a taxi. If you have two passengers or more, its actually cheaper. Also, don't go to the observatory (you have to pay now). Thats the biggest tourist rip off. Just go to the side of the big mall up there or follow the signs to a trail called "Old Peak Road" There are so many excellent FREE views up there that charging is laughable.

4 days 3 nights is enough to catch the majority of the must go and must see. After all, HK is not really that big. Here is the list. Victoria Peak will always be No.1, it's good for all ages and the view is great both day and night (except in bad weather) Try to ride the cable tram up and/or down. Star Ferry ride across the harbor at night, there is lasor lights around 8 pm nightly and the lights on the buildings themselves on both side of the harbor is quite colorful, especially during holidays seasons. Shop in the open markets, there are many. Ladies market is not just for ladies and Temple street market is the classic. There is Jade market, bird market, flower market and the other tour group favorite Stanley market. Ngong Ping 360. The newer cable car ride that let you see the rural areas and the airport. There are other attractions along the way which you are free to select whether to spend time or not, like the big Buddha. If you are visiting in the next 2-3 months, Repulse Bay on the south side of the island is a nice stretch of beach with hippy people and nice properties around. Other attractions include, Ocean Park, Disney, Wetland Park and Lan Kwai Fong. And don't forget to try the food of a HK style cafe as some of the dishes are unique to HK only, like the milk tea and wonton soup noodle etc.

There's really a lot to see/experience in HK...
One of the few things I can name on top of my head: The Peak, The Happy Valley Racecourse, 'Ladies Market', Victoria Harbour etc. And it's a shopping heaven for the shopaholics...

Go to Ladies Market in Mongkok, check out the big budda in Lantau Island, go to the peak to get the full view.
Go to Star Avenue in Tsim Sha Tsui to check out the light show at night. Go to the Temple St market at night. Stanly market in the HK island is a good place. You should also walk on Nathan Rd. Trust me, there is so much to see.
Just mind your wallet and keep it safe. Beware of pickpocket.
