Ifb your saying the turkey is stuffed with like dressing. I dont think the cooking time varies but the rule of thumb is 20 to 25 minutes per pound in a 350degree oven. The time may be a little longer if your oven isnt acurate. I always take the easy way out and use sove top stuffing.Hope it helps.

I would never stuff a 21 pound bird. You can never get that much stuffing up to temperature to kill bacteria and still have meat worth eating. The bird will be dried out before the stuffing is cooked. Bake the stuffing separately in a pyrex baking dish.

Here's a good article on roasting turkey. It would be about 5 hours, depending on if it's stuffed or not. Always use a thermometer.

the turkey will cook faster if you cook the stuffing separately
and then pour some of the goodie from the bottom of the turkey pan on it
