We tried a recipe for brussel sprouts that was terrific Never had the sprouts before but absolutely great. Any more ideas?

STUFFED ARTICHOKE

artichokes
black olives
bread crumbs
egg
Parmesan cheese
artichoke stems
olive oil
salt

Cut off stem, peel and finely chop, set aside in bowl.
Trim off a small portion of the top of artichoke and trim the top of each leaf.

Wash each artichoke and spread open in order to stuff.

To the finely chopped stem, add chopped black olive, egg, bread crumbs, Parmesan cheese. The stuffing should be a consistency that it will stay together but not too dry.

Stuff each artichoke, put in pan or electric fry pan and drizzle each with olive oil and salt...steam in 2 or 3 inches of water.

Be sure to check during cooking process because water may need to be added.

Artichokes are done when leaves pull of easily.

brussel sprouts terrific? i have never heard those words in the same sentence before!!! i have two recipes i like to make as side dishes.

1. asparagus with garlic and lime butter and almonds

2 bunches of fresh asparagus
2 tablespoon of butter (melted)
1/2 teaspoon minced/finely chopped garlic
1 teaspoon lime juice
1 teaspoon brown sugar
slivered almonds

put the asparagus into water in a microwave save dish. microwave for 2 minutes. drain. mix the garlic, juice, sugar into the butter and drizzle over the asparagus. sprinkle with the slivered almonds.

2. Grilled Broccoli with pine nuts

2 big bunches of fresh broccoli
smal pack of pine nuts
2 tablespoons extra virgin olive oil

chop the broccoli into thin bunches - keep most of the stem on!!
heat the oil in your skillet
gently fry up the broccoli
add the nuts and continue to fry until gently browned

serve. yum

3. scalloped potato

1 potato per person (or you can use butternut squash or even sweet potato if you prefer or pumpkin for a very thanksgiving feel)
1 stick of butter
1/2 cup fresh cream
salt / pepper

you will need an oven dish - such as a deep baking dish.

slice the potato (or vegetable of choice) into thin slices.
layer in the dish. add little blobs of butter and sprinkle with salt / pepper. you can add little pieces of finely sliced onion too if you like.
continue layering until the dish is full. gently pour the cream over the top.
bake in moderate oven for about 1 hour (or until you can gently press a knife and the potato are soft). It is really creamy and yummy. My Mom also sprinkles a little flour on each layer to make it thicker - but i find this makes it a bit doughy - so i don't put it in.

4. Tiny baked mushrooms

you will need as many nice shaped mushroom cups as you want - you can use little mushrooms - or choose big field ones.

break out the stalks and either wash or peel the mushrooms.
in the cups, place little pieces of chopped up camembert cheese and sprinkle pine nuts. sprinkle with a little black pepper.

grill the mushrooms just until the cheese browns on the top. these are really delicious - especially cute too.

Onion Pie 3-4 sliced onions in a pie plate( glass or ceramic) Sprinkle with flour to cover ( about 1/4 cup) Add Salt and pepper to taste Add 1 cup shredded cheese Pour 1/2 cup milk over all ingredients Bake at 350 till cheese is browned over and bubbly Or just mix all the ingredients in a bowl and pour into the baking dish.

I'm serving English Peas:

3 cans of peas
2 cans of cream of mushroom soup
2 jars of piementos undrained
Ritz crackers, crushed
Cheddar cheese, shredded

Mix the peas, soup and piementos in a casserole dish and put the cheese on top. Bake at 350 for about 10 or 15 minutes or until heated through and cheese is melted. Top with the crackers and bake until the crackers are a little brown.

Sometimes I miss a good salad at a T-giving dinner. So many carby things. Here's a great and easy layered salad recipe I've made before (the photo is mine) that you can make in a 9 x 13 casserole dish and people serve themselves. Very easy to make.

CORN CASSEROLE

2 eggs
1/2 c. water
2 cans cream style corn
1 c. cornbread mix (Jiffy)
1 tbsp. dehydrated onion
Salt & pepper to taste
1 stick butter

Melt butter in casserole dish. Combine all other ingredients and pour into casserole with melted butter. (Do not mix.) Bake at 350 degrees for 60 minutes.

Light, lavender in color; fruit salad:

drain well:
2 cans fruit cocktail
2 cans mandarin oranges (save few for top decoration)
1 can tidbit pineapple
1 can crushed pineapple
1 large bag (or 2 smaller) thawed raspberries
mix in whipped cream (save some for top decoration)

Try a unique mac n cheese, add different and unexpected add ins like; chopped procuittio, red bell peppers and brie cheese.
