The belief is that someone who is not Jewish should not observe the sabbath in the same way that Jews do.
Namely by Not doing any work (melachah)
All someone who is not Jewish has to do is preform one of those actions.

Many Christians, most notably the 7th Day Adventists, take literally the NT claim that to love God you must obey His commandments. While Paul claims that we are to live under the Law of Grace under the blood of Christ, these communities strive to follow the Law of Moses as best they can.
While their efforts are in vain, since nobody can perfectly obey the Law, they should not be mocked in their understanding of the Bible.
And to the point of your question, anybody can take part in the Sabbath. The Bible never says somebody is forbidden from doing so.

I would say that if you want to come to somone's house who is shomer Shabbos (observant of the laws of Shabbos) and spend the day with them, following the rules of their house, that's fine. In terms of actually observing Shabbos on your own, I would say it's pointless. Non-Jews are not bound by the laws of Shabbos and to do so would seem strange to me.

I went to a Messianic Jewish Sabbath meeting one time. Long story how I was there. Anyways.... I wasn't allowed to partake of the things they passed around, but I was allowed to sing and whatnot.

The sabbath was to be a sign (the sign of the old covenant) between Israel and God, and not God and non-Israelites.
Regardless, that covenant ended, and no one is required or expected to keep the sabbath.
