Peanut oil has a higher burn temperature. If you use olive oil, watch it closely so that it doesn't burn. Most Asian recipes call for peanut oil. I'm not sure why, maybe it is more plentiful in Asia!?

No No No. One of the reasons peanut oil is used in Chinese cooking is because it can take high heat, and it has a neutral flavor. olive oil cannot take as high a heat and it adds a distinct flavor you can substitute corn oil

No. Peanut oil is a lighter oil used in Chinese cooking. Olive oil is heavy, and won't give it the same flavor. You are better off using vegetable or canola oil as a replacement.
