This year me and my hubby want to spend christmas just together as a family (it will be our first christmas in our new place) and plus his parents and mine are doing separate things so it works out.

But i dont know what to cook. We have a 1 year old son, but he will have his own food, so its mainly just going to be for me and my hubby.

I want it to be a nice dinner, but dont know what to cook for just us 2.

any suggestions appriciated.thanks =]

CREAMED PEAS & NEW POTATOES

1 lb. whole tiny new potatoes
1 1/2 c. shelled peas or loose-pack frozen peas
1/4 c. chopped onion
1 tbsp. butter
1 tbsp. all-purpose flour
1/2 tsp. salt
Dash of pepper
1 c. milk

Scrub potatoes; cut any large potatoes in half. If desired, remove a narrow strip of peel from around the center of each potato. In a medium saucepan cook potatoes in a small amount of boiling salted water for 10 minutes. Add peas and cook 5 to 10 minutes more or until tender. Drain.
In a medium saucepan cook onion in butter until tender but not brown. Stir in flour, salt and pepper. Add milk all at once. Cook and stir until thick and bubbly. Cook and stir 1 minute more. Stir in potatoes and peas; heat through. Season to taste.

Serves 4.

MICROWAVE DIRECTIONS: Scrub potatoes; cut any large potatoes in half. Remove a narrow strip of peel from around the center of each potato. In a 2 quart casserole combine potatoes and 2 tablespoons water. Microwave, covered, on 100% power (high) for 8 minutes. Stir in peas. Cook, covered, on high for 4 to 6 minutes more or until vegetables are tender. Drain. Continue as above.

CHICKEN KIEV

Soften:

1/2 pound good quality butter


Add to this:

3 cloves minced garlic
1/4 cup minced fresh parsley
salt and pepper


Refrigerate this until firm enough to cut in chunks.
Pound 8 pieces of boned chicken breasts with the flat side of a meat mallet. Freezer storage plastic bags are great for this since they are durable.

Place chicken breasts inside the plastic bag and pound thinly to about 1/4 inch thick.

Fill with butter mixture and roll as you would for stuffed cabbage. Be careful to overlap and completely enclose the butter. Chicken will be sticky and you can seal the edges by pressing them with your fingers, pinching to close.


Beat together:

4 egg whites
2 tablespoons milk


Roll stuffed chicken pieces in bread crumbs, egg mixture, then crumbs again.
Coat well and refrigerate for at least 20 minutes or until you are ready to deep fry.

Use corn or vegetable oil and do not get the oil at about 350-360°F 8-10 minutes. Fry until golden brown but not crisp. Drain on paper towels. Do not over cook.

Serves 4.

BAKED APPLES

apple
brown sugar
cinnamon
sugar

Core the apple. Stuff apple with brown sugar, cinnamon, and sugar to taste.
Wrap in tin foil and bake until soft.

Just the two of you where a turkey or ham would be too much. How about a duck? Or cornish game hens. Game hens with a different type of stuffing like apple walnut.
Roast duck with cherry sauce.
Easy cherry sauce: 1 can sour cherries drained. 1 12 oz. jar plum jam. Melt the jam in a saucepan add drained cherries and mash. Just before serving warm 1/4 brandy in the microwave. Pour over the sauce and light. Yahoo! that is cool. and tasty too. Kinda romantic with the lights down low.

Colors mixed with variety gives more appeal. One suggestion:

* Cook (small roasting pan) a precooked ham. Add pineapple slices on it (toothpicks to hold onto ham). Sprinkle ham with brown sugar. BROWN & YELLOW

* cook or steam fresh carrots served on lettuce leaf. ORANGE & GREEN

* croissant rolls. TAN

* Make fruit salad night before. LAVENDER
drain well:
2 cans fruit cocktail
2 cans mandarin oranges (save few for top decoration)
1 can tidbit pineapple
1 can crushed pineapple
1 large bag (or 2 smaller) thawed raspberries
mix in whipped cream (save some for top decoration)

How about a ham steak dinner.

The grocery store sells presliced individually packaged ham steaks. To go along with that some scalloped potatoes with fresh green beans. A nice green salad to go along with that, a nice wine of your choice, if you choose too, then dessert. Maybe apple pie or Xmas pudding.

I would get a small eye roast. Have green beans with sauteed almonds, mashed or baked potato and stewed apples. For desert something you both like that is easy to prepare.
