I always wanted to try rattlesnake.
This past year I went to a rattlesnake festival. I did not know that live rattlesnakes smell so bad. The stench is horrible! After I got a whiff of that nastiness I couldn't possibly eat anything.
Other people did try it. They said it tasted like really bad fish.
Watch out for what you wish for.

Alligator tail. The restaurant In Gold Country that we used to call the Road Kill Cafe, used to serve it, but I liked the elk too much. They closed before I had a chance to try it.

smothered squirrel is quite tasty, the bones are small though, I've also had rattlesnake chili, I would like to try mountian oysters though.
