At one time we had 35 people sitting around our holiday table. Everyone had their favorites, so it became tradition to have not only stuffing, mashed potatoes, and gravy, but noodles as well.

Homemade noodles, thick as your finger and with the consistency of dumplings. Cooked slowly in turkey broth, they are divine, and I always ate them over my stuffing.

I cheat, choosing frozen noodles over home made, simply because it's easier. My family loves them so much that the next day I incorporate noodles into a wonderful turkey noodle soup. Home made broth, of course.

I started making soup when I discovered that I hated sorting through the carcass in the roaster to get out all the scraps. Easier to just add water, vegetables and spices, and let that baby simmer away. No guilt for tossing anything away , and every part of the bird serves its purpose.

Yeah, I'm a country girl, but you already knew that.

Oh, to answer your question: I go for the stuffing. I can have mashed potatoes any old time.

I'd rather have mashed potatoes with gravy with lots of salt and pepper. Stuufing is never seasoned enough for me.
