I use allrecipes.com for pie crust recipes but I'm not the best at them. For a replacement for a rolling pin though you can you use a plastic tumbler, I wouldn't use a glass but I guess you could. Flour the cup like you would a pin and go to town.

Best Pie Crust

Mix in a large bowl:
2 Cups All-Purpose Flour
I Teaspoon Salt
1 Tablespoon Sugar

Then mix in:

6 Tablespoons Butter (Warm in microwave until soft not melted)
6 Tablespoons Shortening (like Crisco)
6 to 8 Tablespoons Ice Water

Wrap in plastic wrap and refrigerate for 20 minutes while you are making the filling.

Use a drinking glass for a rolling pin. Makes 2 single crusts.

Pie crust is easy to make. To make just the bottom crust for a pumpkin pie use 1 1/2 cups of flour with a shake of salt and about 2/3 cup of shortening. Cut the shortening into the flour until it is all crumbly. Now add just enough very cold water to make it stick together. Knead it just a little until it is one piece.

Now, put down a sheet of something like Saran Wrap. Put the dough on it and cover it with another piece of wrap. Since you don't have a rolling pin, use a pop bottle to roll it out until it is big enough to fit into the bottom of the pie tin. Take off the top piece of wrap and flip the dough over into the pie tin. Cut any excess off the edge and then crimp the edge with your fingers.

1 tsp. salt

Mix together.

2/3 c. Puritan oil
4 tbsp. cold water

Stir oil in with fork. Sprinkle water over and stir in with fork. Mix together and roll out between 2 sheets of plastic wrap. Peel off plastic wrap and fit in pie pan. Bake at 450 degrees for single crust and 425 degrees for double crust. Makes two 9 inch pie crusts.

I don't make mine. I buy them already made at the store. It doesn't change the taste of the pie and it is so much easier.
