Evaporated milk just has some of the water evaporated out of it, it is condensed. (Makes remembering which is which confusing, I know.)
Condensed milk is as above, but has lots of sugar added to it. Remember it is "Sweetened Condensed Milk" on the can.

The difference between the two lies in the sugar content: one is sweetened, one is not. Both start with whole milk. To make evaporated milk, the milk is heated until about 60 percent of the water is evaporated. To make condensed milk, whole milk is first blended with sugar. It's then heated until about 60 percent of the water is evaporated. Because there's a considerable difference in flavor, you should not substitute one for the other in recipes.

Condensed is thicker and heavier, sweeter and will dilute without losing a lot of flavor, evaporated is milk that has much of it's water content eliminated through evaporation

evaporated milk is milk with over 50% of the water removed. condensed is also milk with water removed but quite a bit of sugar is added. This inhibits bacteria growth but is REALLY sweet. They are NOT interchangeable.... don't try
