My mother has always bought Potato Buds from Betty Crocker. They are easy to make, just boil the amount of water you need for the amount of potatoes you want, measure out the Potato Buds, add some salt, butter (a little more than what the box calls for will add more flavor) and then my mother always added some milk to the mix too. It made for creamier potatoes
If you wanted to try using real potatoes, clean, peel and cut up about two potatoes for each person eating, cover them with water, sprinkle in some salt and boil them until they are fork tender (when a fork is inserted into the potato, it will fall off the fork). While they are cooking, warm up some milk, and set out some butter to soften. Then drain the water off the potatoes, and smash them with a fork, potato masher, even a pastry blender. Add some of the warm milk and mash some more (depends if you like pieces of potatoes or not) and keep adding milk and butter until you get the consistency and flavor you want.
Either way, they are both good. The boxed potatoes are just dried out potato so even though some knock them and there is a difference in flavor, they are still very good. You could even add bacon, onions, garlic... etc to them to make them your own. Sour cream works too!
Good luck and I hope you have an awesome Thanksgiving!

The boxed are quicker and easier but real potatos are the best.
Peal and wash potatoes and chop up in smallest cubes and put in big pan with water to barely cover. Put on lid and cook until tender. Pour off the water and save it. Add some butter and a little milk and either mash with a fort or a whipping tool or take the blender to them. Add back any of the water you poured off as needed to get a good texture. Salt and pepper to taste.
You can just barely break up or whip until they are fluffy. I like mine lumpy. I put the rest of the water from the potatoes into my dressing so I don't pour that nutrition down the drain. They are no problem to do from scratch and much better for you.
I think that is wonderful for you to do this. I once had a great traditional Thanksgiving dinner prepared by a Mexican restaurant. was somewhat strange to have chili peppers in the dressing but it was good.
Good luck
The water you poured off has a lot of nutrition in it,

PLEASE don't do boxed! The real ones are SO easy!!!
Peel some white potatoes (about 1 per person should be enough) & cut them into chunks. Boil them until they are soft (you can stick a fork in really easily.) Drain the water off of them & put them in a mixing bowl. Add lots of butter & smash them down a bit. Mix them with an electric mixer. Add milk - a little at a time until they are fluffy. They will taste SO much better than the boxed ones.

Real mashed are so much better and are really easy. Try them.
6 medium potatoes, peeled and sliced
salt
water
1/4 cup butter
1/4 teaspoon pepper
1/4 to 1/2 cup hot milk
In a 3 qt. saucepan over high heat, heat potatoes, 1 teaspoon salt and water to cover to boiling. Reduce heat to low; cover potatoes and simmer 30 minutes until fork tender, drain. In large bowl with mixer at low speed, beat potatoes, butter, 1 teas. salt and pepper until fluffy. Beating at medium speed, slowly add hot milk until misture is moist and smooth.

Instead of going with the boxed kind go with 'idaho' potatoes in a bag, they come in many different flavors like 4 cheese garlic and herb, baby reds. I prefer the four cheese. to make them even better i 1 3/4 cups water (it calls for 2 cups per bag) then 1/4 cup milk.
hope this helps. happy eating
