Because to be able to roll up the roll must be made into a chiffon type cake. These are more fragile than a chocolate or white regular cake, and the towel holds it all together as you roll it. Once it is in the roll, it is self supporting.
Don't try it today, but sometime, try it without the towel. What a mess. Now, you can eat the pieces with ice cream on top and whipped cream.

I make pumpkin rolls all the time in a jelly roll pan,,, With them you roll them while still warm,, Putting a towel under them and rolling keeps them from sticking,, Then when is cooled you unroll, sperad a creamcheese frostening inside and reroll without towel,,,, So I think the towel is just to keep the cake like mixture from sticking together,,, And you must preroll it while warm, otherwise would break apart if you would let it cool flat and then attempt to roll,,,,, And I'm assuming you plan on filling with some type of jelly or frostening mixture,,, Goodluck & Happy Holidays !

You place it on the towel and roll it up while it is hot to help pre-form it for filling.. Once it is cooled you unroll it fill it with Jam/Jelly and then re-roll it without the towel.
If you roll it up without the towel while it's hot it will crack and be a stuck together mess to unroll when it's cool.
If you let it cool off without rolling it up in the towel, it will take on a flat shape and break apart when you coat it with jelly and try to roll it.

Use the towel to keep the delicate cake from tearing. Jelly roll cake should be made with a very thin sheet cake. It could rip apart and not be as pretty.

It supports the very thin cake layer and keeps it from breaking . Dont roll the towel into the roll, that tastes really bad :)

as others have stated you use a towel to roll the fragile cake into shape hopefully avoiding cracks in the cake. i use parchment paper instead of the towel and when the cake is cold and i unroll it to fill it and i remove the parchment paper.

the towel makes the jelly roll compact and makes it have a very nice form and look very presentable and makes it much easier to work and keep it together.
