RE:
Corn casserole without sour cream?
I want to make corn casserole with the Jiffy mix, but every recipe I find has sour cream in it. Is there any way to make it without the sour cream?

I don't know your recipe but I have never heard of corn casserole with sour creeam. I use 2 cans cream style corn two cups cubed bread, preferably slightly dry. 2 eggs black pepper and chopped onion and bell pepper that have been softened in butter. I top it with the cornbred batter and bake.

you could leave the hot dogs out of this casserole,,,, but why?
Corn Dog Casserole
2 cups thinly sliced celery
2 tablespoons butter or margarine
1 ½ cups sliced green onion
1 ½ pounds hot dogs/Polish or Smoked Sausage
2 eggs
1 ½ cups milk
2 teaspoons rubbed sage
¼ teaspoon pepper
2 packages (8 ½ ounce each) corn bread/muffin mix
2 cups sharp cheddar cheese (divided)
Sauté celery in butter for 5 minutes, add onions, sauté 5 min. more. Remove to a large bowl.
Cut hot dogs into quarters lengthwise, then into half inch pieces. Sauté them 5 minutes in same skillet until browned. Add to vegetables. Set 1 cup of this mixture aside.
In another large bowl, mix the eggs, milk, sage and pepper. Add the larger portion of the hot dog/ vegetable mixture and mix well.
Add the packages of corn bread/muffin mix and mix very well. Add 1½ cups of the cheese and mix well. Spread into a 9 x 13 casserole dish, sprayed with Pam. Top with reserved hot dog mixture and remaining ½ cup cheese.
Bake uncovered at 400 degrees for 30 minutes. Test for doneness with a toothpick inserted into center. If wet batter sticks to toothpick bake another 5 minutes until done.
There is this also, my family calls it Baked Corn. I take it every year for Thxgiving
Baked Corn
3 eggs
1-14 ¾ ounce Can Cream Style Corn
1-14 ounce can Eagle brand sweetened milk (low fat or fat free is OK)
Salt & Pepper to taste
1 Tablespoon corn starch
Separate the eggs and mix all ingredients except egg whites. Beat the egg whites until frothy but not stiff. Fold egg whites into the mixture. Place in a covered 1.6 liter – 2 qt. casserole dish, bake at 350 covered for 30 minutes, remove cover and bake 30 minutes more.

If you have any ordinary cream in the fridge you could 'sour' it yourself by adding lemon juice and some grated lemon zest. Alternatively natural yoghurt could be used or creme fraiche. Hope this helps.
