One apple is considered one cup. But for medium apples...probably one and a half apples will count as one cup?

One medium sized apple equals about one cup. You might want to reconsider the type of apple you are using though. Red Delicious. are not very good pie apples. They tend to be mealy and will turn mushy when cooked. Not to mention they are a lot sweeter than some apples so you might want to cut down on the sugar. I would use Golden Delicious as opposed to the Red Delicious.
Among the really good pie apples are Jonathan, Winesap, and Jonagold, all of which provide a good mix of sweetness and tartness. Other sweet choices are Braeburn, Fuji, Pink Lady, Rome Beauty, and Empire. Good tart baking apples include Idared, Paula Red and Northern Spy.
