A farm term is 'crop'. The gizzard is one per bird and found in the front opening below the neck in their breast. Corn, oats, & other foods they eat go into their crop (gizzard) with something hard like small rocks. This helps grind up the mixed food in the gizzard before it 'feeds' the body its nutrients. Gizzard is similar to our stomach but works much different.
When cleaned, the inside lining is also pulled out so you have only the muscle remaining for eating.

Love turkey gizzards. Couldn't have stuffing without them. They are a stomach. Birds have no teeth so eat rocks so that they can grind their food in the gizzard.

The gizzard is the tough little thing made up of many layers of folded tissue. Watch out for rocks! The birds will eat rocks, which help grind up their food. This internal "chewing" takes place in the gizzard.
The rest of the giblets usually include the kidneys, neck, heart, and liver. Don't use the liver for stuffing/broth... it's too strong. You can wrap it in bacon and broil it. Everything else can go into the pot.

and the ones saying they are heart and liver are wrong wrong wrong, the gizzard is an organ unto itself, there is also a heart and liver,collectively called the gibblings when cooking your turkey (among other names)
