A pot post is usually a tougher cut of meat, like shoulder or arm roast. It needs a long cooking time and moist heat.

Cook it low and slow. It could be the choice of meat. Some are not as tender. some you have to cut across the grain.

I do mine in the crock pot, it's the easy way.
put your veges on the bottom, then seasoned meat,fat side up and @1/2c beef broth. turn it on low for @8 hrs.
Keep veges chunky, so they don't over cook.
It is the most tender meat ever!!!!!

I use a dark beer like Guinness and cook it in that. It adds a rich flavor and tenderizes it.
