Your question leaves out too many variables. I guess the best answer is simply for you to go to the police department concerned and make a complaint against the officer. Most police agencies have a specific branch to investigate police complaints (i.e. IAD, Professional Standards Branch, etc.) Despite what the cop-haters around here say, most departments are genuinely concerned about misbehaviour by officers. The public demands that. The reason I said 'most' is that unlike some others I refuse to generalize about all police departments based on one unconfirmed accusation. Just be prepared to give full and honest answers and reasons for your accusation. Good luck!!

Being too short for your weight or being too heavy for your height has nothing to do with it, why is that even in the question? I have been in Martial Arts most of my life and have seen 90 lb weaklings toss bigger guys than you around. I doubt police harass anyone for no reason, but if this really is the case, file a complaint. By all means, do not try and take the law into your own hands. Give them the respect they deserve, file a complaint if necessary, and beware, even the littlest people around will surprise even a person with your dimensions. Whether you are overweight or a body builder, your size is irrelevant and it shouldn't even be part of the question.

Is this one cop in particular? If so, ask for his number and make a formal complaint about him. If it is cops in general then you might just have to put up with it. Or you could keep a record of every time you are stopped, or "hassled" in whatever way, and take it along to your local police station after a month or so and explain, politely, that you feel you are being targetted unfairly because of your height and size, and would they please leave your law-abiding-self alone and go catch some criminals instead.

Maybe I am reading this all wrong but sounds to me like adding you height and weight is like a challenge to kick some azz.
It also looks like you are asking, since you are so big, is it ok to kick some azz of a smaller cop because he is harassing you.
Like I say, I may be all wrong but throwing your height and weight into the question just raises more questions in my mind.
If it is a legal out for self defense you are seeking, this is way too vague with too many unanswered questions.

Remember its not the size of the dog in the fight, its the size of the fight in the dog.
Try losing some weigh and end every question "I'm 6'5 and 250lbs", maybe you'll get a little respect from us then.

Be polite respectful and cooperative.
Then once the officer is finished - ask him why he stopped you. If you are not satisfied with the answer, ask for the officer to have is supervisor come out and talk to you.
While you are waiting for the supervisor - ask yourself what it is about you that attracts the attention of the police. What makes you different from the other people of your build that the police leave alone?

Due to your physical size, I would say the cop would be justified in shooting you in self defense. You're a big person but you're not bulletproof. Keep that in mind.
